This Creamy Avocado Cilantro Dressing is full of flavor with fresh cilantro, jalapeño and lime juice. Sweet and tangy are balanced in this dressing by the fresh lime and coconut yogurt. It not only makes a great dressing for any salad, but it also serves well as a dip for our family’s favorite Fresh Mexican Spring Rolls.

Lately, my family has been trying to make healthier eating choices without sacrificing flavor or giving up our favorite meals. This includes Mexican food, our all-time family favorite. So we took one of our favorite dishes, chicken tacos, and made it into a spring roll. With all the distinct fresh flavors, we needed something to tie it all together.

That’s when we came up with this Creamy Cilantro Avocado Dressing. You can use it on a salad, but we love it more as a dipping sauce for our spring rolls. Add variation to this recipe by adding an extra jalapeño to step up the heat, or thickening it up with some sour cream. Either way, the bold, classic Mexican flavors are well represented in this smooth dressing.

Creamy Avocado Cilantro Dressing

Ingredients

⅓ cup fresh lime juice
⅓ extra virgin olive oil
1 cup milk
¼ cup coconut Greek Yogurt
¼ cup mayo
½ avocado
1 jalapeno, seeds & stem removed
1 garlic clove, peeled
1 ¼ cup fresh cilantro, coarsely chopped
½ teaspoon cumin
¼ teaspoon salt

Directions

Add all of the ingredients in order listed to Blendtec Twister jar. Be sure to secure the lid and select "Dips/Batters", or blend on a Medium to Medium-Low speed for 30 seconds..

Serve immediately or refrigerate until ready to use. It will last 3 days refrigerated.
