Mint Ice Cream Shake (Adult & Kid Versions)

On a hot summer day, nothing is more welcoming or refreshing than a minty green ice cream drink. And, this recipe is easily tweaked depending on the crowd you are serving.

Every summer my family spends a week up north in our log cabin. We’re talking about 16 adults and 6 children under the age of 5 piled into one cabin. With that kind of chaos, everyone needs a treat. I make these ice cream drinks for our daily Happy Hour in the cabin. I use plenty of creamy vanilla ice cream, chocolate, and mint flavors.

My Blendtec blender makes quick work of the process so everyone gets his or her drink ASAP. This is one summer ritual everyone in the cabin can agree upon!

Mint Ice Cream

Mint Ice Cream Shake

Ingredients 

¼ cup Crème de Menthe

2 tbsp Crème de Cacao

1 cup vanilla ice cream

Chocolate syrup, for drizzling on glass, optional

Instructions

  1. Add Crème de Menthe, Crème de Caco, and ice cream to Blendtec blender. Blend on a medium to medium-high speed until smooth.
  2. If desired, drizzle chocolate sauce along the inside of glass. Add blended Grasshopper and serve.

  Mint Ice Cream Kid-Friendly Version 

Ingredients

¼ cup milk

½ tsp peppermint extract

¼ cup spinach, or 3 drops green food coloring

1 cup vanilla ice cream

Chocolate syrup, for drizzling on glass, optional

Whipped cream and sprinkles, for garnish, optional

Instructions

  1. Add milk, mint, spinach or food coloring, and ice cream to Blendtec blender. Blend on a medium to medium-high speed until smooth.
  2. If desired, drizzle chocolate sauce along the inside of glass. Add blended Grasshopper and garnish with whipped cream and sprinkles.
