Hi ya'll! I am really excited to share one of my favorite new recipes. I've always dreamed of being able to easily make bread and muffins in the blender, but was never really able to achieve success until I got my Blendtec. Now I am seriously baking up blender muffins and bread almost every week.

My newest favorite is a bit on the decadent side, but it's also gluten free, though you would never guess by the taste! The best part is that it’s easy as can be—just toss most of your ingredients into the Blendtec, give it a whirl, and then bake up your muffins. The possibilities are really endless. This version is for flourless muffins—and it is amazing.

You could totally count this as a dessert but still feel great about eating it because it has bananas and heart-healthy peanut butter. While you might traditionally eat a natural or homemade peanut butter, the store-bought creamy version tends to work best in this recipe. Don't worry about the cleanup, though. The wash cycle on the Blendtec is amazing at getting your blender shiny and spotless after every recipe! I’m sure you’re dying to get all the details, so here is how you make it.

Flourless Muffins

Double Chocolate Flourless Muffins

Ingredients

2 ripe bananas
2 eggs
1 cup creamy peanut butter
¼ cup unsweetened cocoa powder
½ cup raw honey or agave
4 tsp vanilla extract
1 tsp baking soda
½ cup peanut butter chips
½ cup dark chocolate chips
½ cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 350°F.
  2. Line muffin pan with muffin cups.
  3. In your Blendtec, combine bananas, eggs, peanut butter, cocoa, honey, vanilla, and baking soda. Select Dips and blend until smooth. If your Blendtec doesn’t have a Batters button, blend on a Medium to Medium-Low speed for 30 seconds.
  4. Stir in dark chocolate and peanut butter chips by hand. Pour into prepared pan and sprinkle with semi-sweet chocolate chips.
  5. Bake in preheated oven for 20-35 minutes or until center is set.
