Posted by Guest Blogger on

St. Patrick’s day is coming up and if you’re hosting a rockin’ party, then you’re going to need some rockin’ drinks. Gone are the days of dyeing beer green and buying pre-made mixers—these are bonafide adult beverages! Jazz up your party with these green and gold cocktails and wow your guests with your impressive bartender skills.

You don't have to mention that it's a cinch with your Blendtec; your secret is safe with us.

St. Patrick's Day Irish Desserts

Luck of the Irish (4 servings)

Ingredients

2 shots creme de menthe
2 shots vanilla vodka
2 large scoops vanilla ice cream (I used an easy Blendtec recipe here)
1 cup ice
2 tbsp heavy cream
Whipped cream (make your own using this Blendtec recipe and pipe it using a pastry bag!)
Green sprinkles

Directions

  1. Add liquids to blender, add ice and ice cream, and press the Smoothie button. If your Blendtec doesn't have a Smoothie button, blend on a Medium or Medium Low speed for 10 seconds, then Medium or Medium High speed for 30 seconds.
  2. Pour into chilled cocktail glasses and top with whipped cream and sprinkles.
  3. Garnish with a peppermint patty for a little something extra!

Pot o' gold (4 servings)

Ingredients

4 shots vanilla vodka
½ container pineapple/orange juice concentrate
2 scoops vanilla ice cream (I used an easy Blendtec recipe here)
1 cup ice
¼ cup heavy cream
Whipped cream (make your own using this Blendtec recipe and pipe it using a pastry bag!)
Gold sprinkles

Directions

  1. Add liquids to blender, add ice and ice cream, and press the Smoothie button. If your Blendtec doesn't have a Smoothie button, blend on a Medium or Medium Low speed for 10 seconds, then Medium or Medium High speed for 30 seconds.
  2. Pour into chilled cocktail glasses and top with whipped cream and sprinkles
  3. Garnish with a gold coin for a little something extra!

You can make these two lovely cocktails an hour ahead of time and store them in the freezer until you're ready to dish them out. If you store them longer, be sure to defrost them a bit and throw them back into the blender with a handful of ice.
